Daio Wasabi Farm
Savor authentic wasabi amidst the pristine landscape of Azumino.
In Azumino, where snowmelt from the Northern Alps flows underground and emerges as pure spring water, Daio Wasabi Farm is a vast wasabi field spanning approximately 15 hectares that draws in this water. Since its opening in 1917 (Taisho 6), it has continued to cultivate wasabi on the largest scale in Japan for about 100 years. 120,000 tons of spring water flow into the wasabi fields every day. The pure water, with an average temperature of 13℃, nourishes the highest quality wasabi throughout the year. A highlight of the farm is the triple watermills, which were also featured in Akira Kurosawa's film "Dreams." The sight of them slowly turning along the Tategawa River is truly a quintessential Azumino landscape. From mid-March to April, the delicate white wasabi flowers are in full bloom. For a close-up view of the clear stream, a river cruise in a "clear boat" with a transparent bottom is recommended. You can slowly admire the scenery, including the riverbed with its swaying aquatic plants. At "Daio-an," which boasts rice cooked in a pot using spring water, "Restaurant OASIS," which serves wasabi dishes, and the souvenir shop "Wasabi-do," you can enjoy discovering unique dishes and specialties that can only be tasted here, such as pickled wasabi, wasabi salt, and wasabi macarons.
